Easy for every day: pan-fried salmon with zucchini

You only need a few ingredients for our beloved salmon pan with zucchini. Healthy, simple and so delicious – simply the perfect dish for stressful days.

Ingredients for 1 serving:

  • 1 clove of garlic
  • 3 spring onions
  • 1 tsp seed oil (e.g. from Mazola)
  • Salt pepper
  • thyme (fresh or dried)
  • 300 g Zucchini
  • 30 g wholegrain quick-cooking rice (8 to 10 minutes cooking time)
  • 100 g diced tomatoes (tin/tetra pack)
  • 1 tsp tomato paste
  • 75 ml vegetable broth
  • 100 g Lachsfilet

Approximately per portion:

  • 350 kcal
  • 15 Fat
  • 33 carbohydrates
  • 21 egg whites

Preparation time:

  • 35 minutes

And this is how it’s done:

  1. Finely dice the garlic clove. Cut the scallions into rings. Fry both in some oil. Season with salt, pepper and thyme.
  2. Slice the courgettes and add them. Then add the rice and sauté. Add the diced tomatoes, the tomato paste and the vegetable broth and stir in.
  3. Rinse the salmon fillet, pat dry, dice and fold in. Cover and let simmer for about 8 minutes. Season and arrange the zucchini pan.
