Ingredients for 4 servings:
- 12 large Roma tomatoes (oblong, oval)
- 1 pot basil (fresh)
- 6 Mozzarella (125 g)
- 1 tsp pine nuts
- 3 cloves of garlic
- olive oil
- 1 TL Parmesan
- Salt pepper
Preparation time:
- 20 minutes
And this is how it’s done:
- First wash the tomatoes thoroughly. Then cut four slits in the tomatoes so that a basil leaf and a thin slice of mozzarella fit between each. Rinse the basil carefully.
- Cut the mozzarella into thin slices and halve the slices if necessary. Now fill the slits of the tomatoes with a basil leaf and a slice of mozzarella.
- For the pesto, lightly toast the pine nuts in a non-stick pan. Then add 15 g basil leaves and the garlic cloves to a blender and chop.
- Add a little olive oil so it is not too dry and stir in the parmesan, mix again. Season with salt and pepper to taste.
- Place the tomato and mozzarella fans on a large plate and pour the finished garlic pesto over them.
