Ingredients for 4 servings:

  • 750 g celeriac
  • 500 grams of potatoes
  • a pinch of salt
  • 500 grams of carrots
  • 1 onion
  • 3 Eggs
  • some pepper
  • 75 g grated Gouda
  • 2 Hähnchenbrustfilets (approx. 250 g)
  • 3 EL Öl
  • 2 EL Butter
  • 150ml milk
  • some grated nutmeg
  • 3 EL Maple syrup
  • 1 stalk of sage
  • 4 sprigs of parsley

Approximately per portion:

  • 440 kcal
  • 16 g Fett
  • 30 grams of carbohydrates
  • 42 grams of protein

Preparation time:

  • 30 minutes

And this is how it’s done:

  1. Peel the celery and potatoes, wash, cut into pieces and cook in boiling salted water for about 20 minutes. Meanwhile peel the carrots, wash and cut into wide sticks. Peel onion and chop finely. Whisk the eggs in a deep plate or small bowl. Season with salt and pepper and mix in the Gouda.
  2. Now pat the chicken fillets dry, cut in half horizontally and possibly pound a little flatter. Dip the schnitzel in the egg mixture, press down on the cheese if necessary. Heat 2 tablespoons of oil in a large pan, fry the escalopes in it for about 4 minutes on each side until golden brown.
  3. Heat the remaining 1 tbsp oil in another pan. Sauté onion and carrots in it. Season with salt and pepper. Add 100 ml water and simmer for about 5 minutes until the liquid has almost evaporated.
  4. Drain the potato mixture and let it evaporate briefly. Add the butter and milk and mash the vegetables finely. Season with salt and nutmeg. Add maple syrup to the carrots, then simmer for another 2-3 minutes. Wash the sage, pluck off the leaves and fry briefly in the pan with the escalopes. During this time, wash the parsley and cut into strips. Serve the schnitzel with the puree and carrots. Sprinkle with parsley and serve warm. Enjoy your meal!
